This rustic mediterranean dish is easy to prepare. Thick eggplant slices are shallow fried in a bit of olive oil and then gently simmered in a chunky tomato sauce. The yielding result is extreme melt-in-your-mouth tenderness.

Whenever I make this for dinner, there is always silence at the table. This is our favourite meat sauce. It’s thick, rich and full of fresh ingredients. Most sauces are simmered for long periods of time, but this one is ready in under an hour. I add an unusual, but common household ingredient that tenderises the meat.
